Venison is of particular interest for those concerned about healthy eating. It is both low in fat and cholesterol, and is very high in protein, vitamin, and minerals. Wild boar, as well as deer meat, is very lean, as and such, should be cooked slowly. Wild boar meat can easily be substituted in most pork recipes, for a more delicate and refined taste. 

Here are some of our favorite recipes we would like to share with you.


Maple Wild Boar Chops :
Ingredients
  • 4 large chops or 8 small ones;
  • 2 tablespoons vegetable oil;
  • 1/3 cup maple syrup;
  • 2  garlic cloves thinly sliced;
  • 2 tablespoons lemon juice;
  • 1/4 teaspoon thyme;
  • Salt, pepper to taste.
     

    Preparation.

    Mix all the ingredients.  Add the chops, coating well and let marinate for one hour in the refrigerator.  Drain chops.

    Brown with a little oil over medium heat, for 5 minutes.  Add the marinade and cook for  2 additional minutes.

    Serve with rice or pasta .



  • Wild boar pâté :
    Ingredients
  • 2 Pie crusts;
  • 3 lbs  wild boar meat, minced or diced;
  • 3 cloves crushed garlic;
  • 1.1/2 cup chicken broth;
  • Salt, pepper, rosemary.

    Preparation

    Cook the meat, add the broth and seasonings. Mix well.  Cook, covered, for about 2 hours or until the broth is absorbed.  Place in the piecrust, and lay the second crust over the top.  Place in the oven for 10 minutes, at 425ºF.  Lower  temperature to 400ºF, and cook until browned.



  • Wild boar chops with sweet and sour sauce :
    Ingredients
  • 8 wild boar chops;
  • 2 tablespoons vinegar;
  • 1/4 teaspoon red pepper;
  • 3/4 cup ketchup;
  • 3/4 cup water;
  • 3 tablespoons brown sugar;
  • 1 onion, chopped.

    Preparation

    Brown the chops and the onion. Mix remaining  ingredients and place in an ovenproof dish. Cook for 1 hour at 350ºF.

  • Marinated deer :
    Ingredients
  • 1 lb deer steak, thinly sliced ;
  • 1/2 teaspoon cornstarch;
  • 1 tablespoon Soya sauce;
  • 1 tablespoon HP sauce;
  • 1 tablespoon vegetable oil.

    Preparations:
    Mix all ingredients, and coat  steaks well.  Place in the refrigerator 1/2  hour or more.  

    Cook in the oven, preheated to 350ºF,for 15 minutes.

    Serve with rice or butter noodles.
